M&H Distillery started producing gin with a clear decision: their gin would be a single malt gin, made from 100% malted barley, just like their whisky. They use a generous amount of juniper and origanum syriacum (za’atar), along with lemon peel, orange, chamomile, verbena, cinnamon, and black pepper. These carefully selected spices are infused for 48 hours before the gin is distilled for the third time.
